This is a lightened up version of the spicy Chinese classic, Kung Pao shrimp. It does require specialty pantry items you will find in most grocery store ethnic aisles today. If you like Chinese food as much as I do, but would prefer healthier versions than your average take-away (they can be very high in calories, fat, sugar, sodium and MSG) it is well worth the investment. Chinese food bursts with flavor that both adults and children find pleasing. You’ll use these ingredients again in quite a few recipes here, plus a quick internet search will turn up many more.
