Succulent chicken breast in a creamy mushroom sauce, served over spinach is in fact a dish of American origin, not Italian. Although, the “Florentine” preparation of food traces back to Catherine de Medici, who haled from Florence Italy, but was well known for her appreciation of French cooking. It was not in fact the spinach for which this dish is named, but rather the béchamel (white sauce) that she was so fond of.
