This is the French version of Chicken Cacciatore. The main difference is simply the addition of a little brandy, plus using tarragon instead of basil and oregano. It’s such an easy dish to make-ahead for a winter dinner party (and looks very Christmassy since when you sprinkle flat leaf parsley over the rich red sauce). I served it at my first annual holiday party for my team that help keep my business on track. It got the thumbs up from all of them, so I’m adding it here for you all to enjoy too.
