I’ve been making this recipe for so many years I have forgotten it’s original source, but it is not only a client staple, it is one of my personal favorite fish recipes, so I thought I should share it with all of you too. It is fast, easy, and elegant, so I often serve this for dinner parties as well as weeknight dinners.

      Stephanie – you’ll find you can often substitute a kind of fish, or even another kind of protein (I’ve made this recipe with chicken – although you’ll need to adjust cooking time). Ask the guy behind the fish counter which fish would be the best substitute for the one in the recipe, and they will usually be quite helpful. PCA RULE #1 of grocery shopping: don’t be afraid to ask the store staff for help.
