I’m coming up on two major milestones this year. The Roving Stove personal chef service will be celebrating 10 successful years in business, and this Thursday my membership site JulieAnneRhodes.com will be celebrating it’s first anniversary. Some thought I was crazy! Why would a multi award-winning personal chef want to offer to offer the majority of her services at a mere fraction of the cost of her normal fees? I wanted to reach out to people globally, not just in my own city, and help many more people afford the luxury of time.

When the economy took a drastic blow in 2008, I worried I would lose clients. I mean lets get real here, if you have to cut back on services; are you going to let the person who cleans your toilet go first, or the one that cooks your food? Luckily, the majority of my clients had a large enough financial cushion to keep me on, but that also proved they valued my service greatly. Instead of going under, we are actually expanding.

That got me thinking about all the other hard working singles, couples and families that needed to whittle out a way to get a healthy, delicious dinner on the table nightly, while still keeping up with all the other demands on their time. Since women’s lib hit America in the 70′s, the average household transformed from stay at home wives and mothers to double income households. Great, except along with it came an unhealthy fast food, preservative ridden diet to keep up with the new demands on our time. It also meant many of you didn’t grow up learning to cook with your mothers as previous generations had, therefore you might find the prospect of cooking baffling, if not downright scary.

Jewels Turkey-Jasmine Burger

This is one of the first recipes I ever wrote, and it won “best poultry burger in America” on Food Network’s Ultimate Recipe Showdown! Since it is a little labor intensive, I would recommend doing double portions of at least the turkey burgers to freeze for a later date – why make a mess twice when you can do it all at once? After all it is about affording YOU the luxury of time!

INGREDIENTS:

CUCUMBER SALAD

1 cucumber, peeled and thinly sliced rounds
1/2 red onion, thinly sliced
1/4 cup rice vinegar
1/8 cup sugar
1 teaspoon salt

BURGER

1 1/4 pounds ground turkey
1/3 cup steamed jasmine rice
1/4 cup panko
1/4 cup thinly sliced green onions
1 large egg
1/2 teaspoon sesame oil
1 tablespoon soy sauce
1 Thai chili or serrano chile, seeded and minced
1 teaspoon sugar
Salt and freshly ground black pepper
1 tablespoon peanut oil
4 sesame hamburger buns

WASABI MAYONNAISE:

1/2 cup homemade mayonnaise or store-bought
1 teaspoon wasabi powder
1/2 teaspoon minced ginger
1 teaspoon finely chopped lemon peel

DIRECTIONS:

CUCUMBER SALAD:

1. Toss cucumbers, onions, rice vinegar, sugar, and salt in a medium sized bowl. Let it marinate at room temperature for 1 hour.

BURGER:

2. Mix ground turkey, rice, panko, green onions, egg, sesame oil, soy sauce, Thai chile, and sugar very well. Make into 4 patties. Season with salt and pepper.

3. Heat peanut oil in a large skillet over medium-high heat. Saute burgers until cooked through, approximately 5 to 6 minutes per side (depending on how thick you make them).

WASABI MAYONNAISE:

4. While burgers are cooking, toast buns, and mix mayonnaise, with wasabi powder, ginger, and lemon peel in a small bowl.

5. Drain cucumber salad well.

6. Smear 1 tablespoon wasabi mayonnaise on toasted bun halves, spread with a layer of drained cucumber salad, then top with burger and cover with bun top.

      Yes, I guess this has become my signature dish by default. I never know how to answer “what’s your speciality?” since it depends on what my mood is that day. I’d like to think it’s diversity – recipes that cover a wide range of tastes and lifestyles that are flavorful enough an adults’ more sophisticated palate while still being kid-friendly.

      BTW, it works both ways. I’m so honored to get to know my members, and I learn so much from all of you too.

    You know how much I love the PCApproach! Anyone who doubts that they would benefit from being a member really needs to think about the time they spend cooking each nite, how much food goes to waste in the fridge. You have the best of intentions when you do your grocery shopping, but how much of what you bought like fresh fruit/veg ends up being binned because you didn’t use it up in time? PCA provides the grocery list and by setting aside the time to cook up the meals, you ensure that you are not wasting food. Waste = $$ down the drain. I love the cucumber salad and make a container of it to keep in the fridge for those late night snacks. Healthier than cookies and I have to admit, I’m addicted to it now.

    It’s almost been a year and there hasn’t been a moment when I’ve regretted joining up. Last week one of my daughter’s school friends sprang a birthday party on me the day before. It was also a dance night for the youngest daughter and her costume fitting for her performance. To add to the madness, the same time ballet was ending, the oldest had to be at the hotel for the party and it was farther across the city! Took the youngest home and had her dinner ready in 5 minutes. She was happily eating her cauliflower mash and chicken. Home made. The oldest is REALLY sold on it. At 6 years old, she will loudly announce how unhealthy things are when she sees processed foods in the grocery store. It has changed their taste buds to appreciate homemade, flavourful food instead of fake food. If you ask my six year old what fast food is, she replies “food that your mom makes fast and is healthy”

    I cannot stress enough for people to try this, I rarely cook less than two weeks worth of food at this point! I double most of the recipes, half goes in the fridge, half in the freezer! I throw in a few fame stand by dishes with yours each time I PCA. My children’s palettes Hsve expanded. They try everything and are surprised a lot of times at how much they like it! If you’re on the fence about this, trust me when I say it’s worth the small price to have healthy, home cooked meals on the table every night! It has been a guilt and heart saver for my family. Xo

    I have to agree with all the above comments. It’s an honor to be a member! Thank you so much for sharing your ideas, inspiring me, “adding” hours to my day and for creating a fabulous website. Not only is it invaluable for the recipes but the community and friends I’ve made are priceless. Even though I’ve been busy and not on the site as much as I want lately (I’m so busy at work), your site is my “go to” site. After all, since I am so busy right now, there is no better time to use the personal chef approach.

    You know, I have to remind myself of that too sometimes, Suzanne. I get so caught up in work and deadlines like everyone else. When I don’t set aside a couple hours to do a PCA™ cook date for myself, both dinner and life become so much more unmanageable.

    I spend a lot of my time living in a hotel in Mumbai. So pleased I decided to sign up for PCA, so when I go home for a couple of weeks I can cook these recipes. In the meantime, reading the recipes and organising my grocery list. Congratulations! It’s not easy…. I look back when I trained as a cook and worked as an assistant to a mad as a hatter cookery writer. Keep it up Jewels.
