My luncheon menu consists of earthy and nutty–yet fresh–flavors, which are appropriate year-round. Though these dishes are somewhat light, consuming the multi-course menu will prove to be satisfying. A variety of cheese and some nuts provide sustaining protein in this (accidentally) vegetarian menu.

I prefer serving simple dishes with limited ingredients so that the flavors are not too complex nor overpowering (plus, that means less time in the kitchen!). And I definitely want to limit foods that don’t mix well with ladies trying to hold conversations: strong garlic, long noodles, and spinach that can get stuck in our pearly whites!

MENU:

Fontina Melted on Mini-Toasts and Drizzled with Honey Rocket (Arugula) Salad with Beets and Goat Cheese, and Lemon-Olive Oil Dressing

Wild Mushroom Ravioli with Browned Butter, Fresh Sage & Grated Parmigiano-Reggiano
 
Sliced Fuji Apple served with Individual Ramekins of Pumpkin Dip
(beat together 6oz reduced-fat cream cheese, 1/2C packed brown sugar, 1/2C canned pumpkin, 2tsp maple syrup, 1/2tsp ground cinnamon)

Almond Champagne
(with splash of chocolate port during the dessert course to make an “Almond Joy” cocktail!)

Congratulations Suzanne… it is a wonderful menu that I plan to serve at my next party. I love that it is “accidentally” vegetarian, because I think that is why it translates well for everyone – even hard core meat eaters wouldn’t mind a menu like this. The voting certainly proved that. The menu was well thought out. Both menu and recipes are really creative yet economical, plus you’ve shown us that keeping it relatively simple is not only user friendly, it is elegant. I think the Almond Joy aperitif just hit it out of the ball park. Well done! I want to reiterate that all of the menus submitted were fabulous in their own right. Thank you to everyone who participated, and to all of you that voted. This was fun. I already have a few ideas for more competitions up my sleeve, so please do keep coming back.
